Typical STEAK quantities fall between 23-25% of finished weight. Typical GROUND BEEF quantity falls between 52-54% of finished weight. Typical ROAST quantities fall between 21-23% of finished weight.

Yield weights vary depending on breed, age and diet. Beef you purchase from Caledonia Packing will be freezer beef stock, less than 30 months of age and fed a hay/grain diet. Higher yields can be obtained by including offal (liver, heart, tongue, tail, kidneys, bones and fat).
Ground beef is targeted at an 80/20 blend.
